Ingredients:
12 strawberries, 2 kiwis, 1 navel orange, 4 slices of Japanese milk bread, 1 cup of heavy cream (240 ml), 5 teaspoons of sugar 24g
Steps:
1. Fill a large bowl with ice water and place a clean and dry medium-sized bowl in it to keep it cool. Add the heavy cream to the medium bowl and start mixing it on low speed.
2. Once bubbles form, add the sugar and continue whisking on medium-high speed.
3. Whisk until the cream thickens and forms crests when the mixer is removed.
4. Switch to a hand mixer and whisk until the whipped cream reaches the desired consistency. It should be spreadable but not too runny, as it will be sandwiched between the bread slices.
5. Spread the whipped cream evenly on both sides of the bread slices. If there is any whipped cream left, you can either dip the fruit in it or use it to make a parfait.
6. Leave the crust on the bread as it helps maintain the shape of the fruit when sandwiched.
7. Arrange the fruit on one side of the bread, creating an appealing presentation.
8. Add whipped cream between the fruit slices.
9. Place the second slice of bread on top, with the whipped cream side facing down.
10. Take a large piece of plastic wrap and wrap it tightly around the entire sandwich, making sure not to change its orientation.
