Ingredients:


1 ½ cups fresh strawberries, hulled and pureed


2 cups all-purpose flour


1 ½ cups sugar


1 tsp baking powder


½ tsp baking soda


½ tsp salt


1 cup buttermilk


½ cup vegetable oil


3 large eggs


1 tsp vanilla extract


For the strawberry frosting:


1 cup butter, softened


4 cups powdered sugar


¼ cup strawberry puree


1 tsp vanilla extract


Steps


Prepare the strawberry puree:


Blend the strawberries until smooth. Set aside ¼ cup of this puree for the frosting and use the rest for the cake batter.


Mix the batter:


Set the oven temperature to 175°C (350°F). Mix the flour, sugar, baking soda, baking powder, and salt in a big bowl. Combine the buttermilk, oil, eggs, vanilla, and strawberry puree in a another bowl. Mix just until mixed after gradually adding the wet components to the dry ingredients.


Bake the cake:


Grease and flour two 9-inch cake pans. Divide the batter evenly between them. Bake for 25–30 minutes, or until a toothpick inserted in the centre comes out clean. Allow the cakes to cool in their pans for about 10 minutes before transferring them to a wire rack to cool fully.


Make the frosting:


In a mixing basin, cream the butter until smooth. Gradually include the powdered sugar, mixing thoroughly after each addition. Add the reserved strawberry puree and vanilla essence, and blend until smooth and creamy.


Assemble and serve:
